Winter Recipes

Winter in WNY can be brutal. This winter may be setting the bar, with dramatic ping-ponging temps and snow storms that last days. If you’ve managed to avoid slipping on the ice or getting blown over by a gust of wind so cold you can’t breathe, consider yourself lucky.

In this area, we don’t need no stinkin’ groundhog to tell us that we have (at least) six more weeks of winter. And while the long winters can be arduous, one thing that’s great about them? Winter cooking. While nicer weather brings out more fresh produce, salads, barbeques and cold dishes, winter is all about the comfort food – hearty stews and soups, casseroles, roasted or baked dishes, and more!

Here are 7 of our favorite winter recipes to help you tough out the rest of winter.

  1. Spinach Ravioli Bake

This family-pleaser is also incredibly easy. If your family loves lasagna but you don’t have time to cook it from scratch, this is a simple way to get the same flavors in ⅓ of the time.

  1. Skillet Mac & Cheese

Start-to-plate time: 30 minutes

Anyone who says they don’t like mac & cheese probably isn’t telling the whole truth. This recipe is super easy, super delicious, and super comforting on a cold, blustery day.

  1. Slow-Cooker Boeuf Bourguignon

Start-to-plate time: 8-9 hours

This recipe may not be a weeknight dinner endeavor, but for a more special occasion (winter dinner party, date night, etc.) it’s well worth the prep time. And you know what? This classic dish may not be as intimidating as you think.

  1. Simple Meatloaf

Start-to-plate time: 1 hour 40 minutes

There are plenty of people out there who try to doll up meatloaf, but we think a well-made simple version is hard to beat. Depending on the number of people you’re feeding, we suggest making 2 at once – leftover meatloaf can be transformed in many delicious ways!

  1. Simple Carrot Soup

Start-to-plate time: 30 minutes

Tomato soup may get all the attention, but carrot soup is just as warm and creamy, and it’s much more versatile. This recipe uses canned coconut cream, which is a much healthier alternative to heavy cream. If you’re not using this ingredient yet, this recipe will prove why you should be.

  1. Slow-Cooker Pot Roast

Start-to-plate time: 3-8 hours

This is the recipe that slow cookers were made for. It’ll take 5 minutes to prep, then you can cook it on your timeline. Simple, delicious, and convenient. It’s a winter dinner dream.

  1. Winter Squash Chicken Pan Roast

Start-to-plate time: 1 hour 45 minutes

This is a one-pan recipe that uses whole chicken legs and creamy butternut squash mixed with apples and sage. Is your mouth watering yet? Another recipe that’s great for a casual dinner party, but also makes a wonderful Sunday night family dinner.
